Stir Fried Joi Choi

    Trim the end off the joi choi, separate the leaves and rinse them clean. Heat the olive oil in a frying pan, add the garlic and the ginger and simmer for a few moments. Add the joi choi leaves and toss them to coat each leaf with the oil. Increase the heat and continue tossing until the leaves are wilted - 15 to 30 seconds. Add a few drops of water, cover and let it steam for a minute. Season with salt and drizzle with a bit of sesame oil.
