Miso Soup with Kale and Daikon

    Put water, lemon, ginger and miso in a small soup pot and bring to a light simmer, stirring to dissolve the miso. Do not boil - the probiotics in miso are sensitive to too much heat. Add daikon and carrots and cook gently until the vegetables are tender. Add kale, stir and simmer 5 min, or until the kale is tender. Remove lemon pieces.
