Eggplant Hors d’oeuvres

Method

Instead of a cracker, how about using a slice of roasted eggplant as the base for your hors d’oeuvres?

    Preheat the oven to 400º. Cut the eggplant into slices about 1/2-inch thick and the size of a small cracker. Brush both sides of the slices with olive oil and salt, and arrange them on a baking sheet. Bake the eggplant slices until soft and browned on the bottom, about 15 minutes. Turn them over and cook another 5 minutes until lightly browned on both sides.

    Top the eggplant slices with fresh mozzarella, olive oil and herbs, or diced tomatoes!
